3 Health Reasons to Cook with Cast-Iron

Cast-iron skillets may seem like an old-fashioned choice in the kitchen. But this dependable cookware is a must in the modern kitchen.

Cast-iron skillets conduct heat beautifully, go from stovetop to oven with no problem and last for decades. (In fact, my most highly prized piece of cookware is a canary-yellow, enamel-coated cast-iron paella pan from the 1960s that I scored at a stoop sale for $5.) As a registered dietitian and associate nutrition editor of EatingWell Magazine, I also know that there are some great health reasons to cook with cast iron.
1. You can cook with less oil when you use a cast-iron pan.
That lovely sheen on cast-iron cookware is the sign of a well-seasoned pan, which renders it virtually nonstick. The health bonus, of course, is that you won’t need to use gads of oil to brown crispy potatoes or sear chicken when cooking in cast-iron. To season your cast-iron skillet, cover the bottom of the pan with a thick layer of kosher salt and a half inch of cooking oil, then heat until the oil starts to smoke. Carefully pour the salt and oil into a bowl, then use a ball of paper towels to rub the inside of the pan until it is smooth. To clean cast iron, never use soap. Simply scrub your skillet with a stiff brush and hot water and dry it completely.
2. Cast iron is a chemical-free alternative to nonstick pans.
Another benefit to using cast-iron pans in place of nonstick pans is that you avoid the harmful chemicals that are found in nonstick pans. The repellent coating that keeps food from sticking to nonstick pots and pans contains PFCs (perfluorocarbons), a chemical that’s linked to liver damage, cancer, developmental problems and, according to one 2011 study in the Journal of Clinical Endocrinology & Metabolism, early menopause. PFCs get released—and inhaled—from nonstick pans in the form of fumes when pans are heated on high heat. Likewise, we can ingest them when the surface of the pan gets scratched. Both regular and ceramic-coated cast-iron pans are great alternatives to nonstick pans for this reason.
3. Cooking with cast iron fortifies your food with iron.
While cast iron doesn’t leach chemicals, it can leach some iron into your food...and that’s a good thing. Iron deficiency is fairly common worldwide, especially among women. In fact, 10% of American women are iron-deficient. Cooking food, especially something acidic like tomato sauce in a cast-iron skillet can increase iron content, by as much as 20 times.

1. Sinus Headaches Are Rare: Nasal and sinus congestion, facial pain and pressure, and a headache usually don’t add up to a sinus headache. Headache specialists say that “true” sinus headaches are rare. In a study with almost 3,000 patients who had at least six “sinus headaches” in the previous six months, medical evaluations showed that 88 percent actually had migraines. In another study, 45 percent of migraine patients had either nasal congestion or watery eyes.Tipoff: it’s probably migraine if in addition to “sinus” symptoms, you’re nauseous, sensitive to light or noise and if the headache throbs and worsens with activity. 
2. Processing 3D Images Causes Brain Strain: A Northwestern University ophthalmology professor warns that a large segment of the population may develop a headache and nausea while watching 3D movies. This is due to the brain strain involved with processing the three dimensional images - the more an image jumps out at you, the more effort your brain must make to fuse the pictures together, says Northwestern University's Michael A. Rosenberg, MD. 
3. Take-Off and Landing Lead to Headaches: No, this has nothing to do with the aggravation of cancelled flights or long delays. Instead, sudden, severe, stabbing headaches during a plane’s ascent or descent are being reported. Doctors haven’t figured out yet what causes them. Luckily, the pain lasts only about 20 minutes. 
4. Bug Spray Prompts Headaches: It’s not the bugs but exposure to insecticides used to kill them that causes these headaches (plus dizziness, trouble breathing, nausea and vomiting). According to the U.S. Centers for Disease Control and Prevention, most cases required no medical treatment, but one death has been reported and 18 percent of those exposed to the insecticides required medical attention.    
5. High Cholesterol Causes Headaches: You may not have to worry unless you’re in your late 60s or older and have migraines with aura (the flashing lights, tingling and other signs of a headache’s approach that about one-third of migraine patients report). A recent study found a link between migraine with aura and high cholesterol in seniors. Migraine with aura has also been linked to a higher risk of heart disease and stroke. 
6. Headaches Might Be Genetic: Researchers have pinpointed three genetic variations linked to an increased risk of migraines. One is involved in sensing cold and pain, another is linked to several processes including signaling in nerve cells (neurons). The role of the third isn’t yet known. Each of the gene variations identified alters the risk for migraines by 10 to 15 percent. 
7. Alcohol, As a Trigger, Is Overstated: Research from Italy suggests that the role of alcohol and some foods in triggering migraines has been overstated. Instead, the investigators found that stress, fatigue and in women, menstruation are most often the culprits. They suggested that migraine patients who want to drink alcohol could try small amounts of specific types to see what they can tolerate. 
8. Botox Can Treat Headaches: Best known as a wrinkle remover, Botox also can put the brakes on chronic migraines (those that occur 15 days per month or more). The U.S. Food and Drug Administration has approved the use of Botox for migraine prevention. Injections seem to cut down on headaches, although studies suggest that Botox doesn’t work as well as some prescription drugs.  Researchers still haven’t figured out how Botox staves off the headaches, but they do know that effects last only about three months before patients have to be re-injected.

The Battlefield Has Created a New Type of Headache: About one third of the soldiers returning from Iraq are bringing with them a new type of chronic migraine caused by nerve damage or the pressure from bomb blast waves. Can't Sleep? 7 Eats to Avoid

Certain meats, spices, and even tea can act as stimulants and leave you tossing and turning.

Here is 7 food that keep you awake :
Aged Cheese
If a nap is in your future, steer clear of Parmesan, Romano, Asiago, and other hard cheeses (basically, all the yummy smelly ones!). The high levels of the amino acid tyramine are known to keep you up.

Milk Chocolate
Milk Chocolate
The average milk chocolate bar contains tyrosine, which is converted into dopamine — a stimulant, says Cynthia Pasquella, CCN, CHLC, CWC. This causes alertness and restlessness, which can keep you up at night.

Spicy Foods
Those hot wings may taste damn good during the football game, but they aren't going to feel so great come bedtime — especially if you're prone to heartburn. Make sure you eat your favorite hot foods early enough in the day to prevent a sleepless night later.

Tomato-Based Sauces
Have that plate of pasta at least few hours before tucking in at night. Tomato-based foods have a tendency to cause acid reflux and heartburn, which will prevent you from having a good night's sleep.

Soy
Fermented soy products have some of the highest amount of tyramine — meaning soy sauce, tofu, miso, and even teriyaki sauce should be avoided hours before snoozing.

Ginseng Tea
Herbal teas are great for sleeping, but steer clear of ginseng. It's been shown to act as a stimulant, and though some tea drinkers don't feel any effects from the tea, others experience insomnia and hypertension. If you might fall in this category, avoid drinking it several hours before bed, recommends Pasquella.

Processed or Smoked Meat
Leave this one on the deli counter. Pasquella says processed meats contain high levels of tyramine and makes the brain release a chemical that makes us feel alert. These meats also aren't the healthiest ones to munch on either, sleep patterns aside.
